Asturian Fabada
Hearty bean stew with chorizo, blood sausage and pork belly.

Ingredients
- 500 g Asturian fabes (soaked overnight)
- 2 Asturian chorizos
- 2 Asturian morcilla (blood sausage)
- 200 g pork belly
- 150 g lacón or salt pork
- 1 onion
- 2 garlic cloves
- 1 bay leaf
- 1 teaspoon sweet paprika
- A few saffron threads
- Salt to taste
- Water
Step-by-step

- Soak the fabes in cold water overnight and drain.
- Put the onion in quarters and the garlic in the mixing bowl. Chop 5 sec/speed 5.
- Add a splash of water and sauté 5 min/Varoma/speed 1.
- Add the drained fabes, chorizo, morcilla, pork belly, lacón, bay leaf, paprika and saffron. Cover with water up to near the max level.
- Set 90 min/100°C/spoon speed/reverse. Watch the water level and add cold water if needed to shock the beans.
- Check that the fabes are tender. If not, cook 20 min more/100°C/spoon speed/reverse.
- Adjust the salt, remove the meats to slice them, and serve piping hot.
Tips
- Always use reverse so the fabes don't break apart.
- Let the fabada rest a few hours — it tastes even better the next day.
