Ingredients

  • 8 fresh artichokes
  • 100 g serrano ham, diced
  • 2 garlic cloves
  • 120 g extra virgin olive oil
  • 1 lemon
  • Salt to taste
  • Chopped fresh parsley
  • 1 teaspoon sweet paprika

Step-by-step

Choose your robot:
  1. Clean the artichokes, cut them into quarters and rub them with lemon so they do not oxidize.
  2. Put the oil in the mixing bowl and heat it 3 min/120°C/speed 1.
  3. Add the sliced garlic and saute 2 min/120°C/speed 1.
  4. Add the artichokes and confit 18 min/Varoma/reverse/spoon speed.
  5. Add the ham and saute 3 min/120°C/reverse/spoon speed.
  6. Add the paprika and the salt and mix 10 sec/reverse/spoon speed.
  7. Check that the artichokes are tender.
  8. Serve with chopped parsley and a drizzle of the confit oil.

Tips

  • Reverse keeps the artichokes whole.
  • You can use canned artichokes for a quicker version.
  • Serve on toast as an appetizer.
