Confit artichokes with ham
Tender artichoke hearts confit and sauteed with ham.

Ingredients
- 8 fresh artichokes
- 100 g serrano ham, diced
- 2 garlic cloves
- 120 g extra virgin olive oil
- 1 lemon
- Salt to taste
- Chopped fresh parsley
- 1 teaspoon sweet paprika
Step-by-step
Choose your robot:
- Clean the artichokes, cut them into quarters and rub them with lemon so they do not oxidize.
- Put the oil in the mixing bowl and heat it 3 min/120°C/speed 1.
- Add the sliced garlic and saute 2 min/120°C/speed 1.
- Add the artichokes and confit 18 min/Varoma/reverse/spoon speed.
- Add the ham and saute 3 min/120°C/reverse/spoon speed.
- Add the paprika and the salt and mix 10 sec/reverse/spoon speed.
- Check that the artichokes are tender.
- Serve with chopped parsley and a drizzle of the confit oil.
Tips
- Reverse keeps the artichokes whole.
- You can use canned artichokes for a quicker version.
- Serve on toast as an appetizer.
