Mexican guacamole

Creamy avocado with tomato, onion, cilantro and a touch of lime.

Ingredients

  • 3 ripe avocados
  • 1 ripe tomato
  • 1/2 small onion
  • 1 garlic clove
  • A few sprigs of fresh cilantro
  • The juice of 1 lime
  • 1 jalapeno pepper (optional)
  • 1 teaspoon salt
  • A drizzle of olive oil

Step-by-step

Choose your robot:
  1. Put the onion, garlic and cilantro in the mixing bowl and chop 4 sec/speed 5.
  2. Scrape down the sides with the spatula.
  3. Add the chopped tomato and the jalapeno and chop 3 sec/speed 4.
  4. Add the avocado flesh, the lime juice and the salt.
  5. Blend 6 sec/speed 4 to keep some texture.
  6. Check the salt and lime seasoning and adjust to taste.
  7. Transfer to a bowl and drizzle with a little olive oil.
  8. Serve immediately with tortilla chips or nachos.

Tips

  • To prevent oxidation, leave an avocado pit inside the bowl.
  • If you prefer it spicier, keep the jalapeno seeds.
  • Prepare it just before serving for a brighter color.
