Ingredients
- 300 g desalted and flaked cod
- 200 g peeled potato
- 2 garlic cloves
- 100 g extra virgin olive oil
- 100 g cooking cream
- White pepper to taste
- Nutmeg to taste
- 500 g water
- Chopped fresh parsley
Step-by-step
Choose your robot:
- Put the water in the mixing bowl, place the basket with the chopped potato and set 20 min/Varoma/speed 1.
- Check that the potato is tender, remove the basket and set aside.
- Empty the water from the mixing bowl and add the garlic, blend 5 sec/speed 7.
- Add the flaked cod and the cooked potato.
- Blend 15 sec/speed 5 until you get a paste.
- With the blades running at speed 4, add the oil and the cream little by little through the lid opening.
- Add the pepper and the nutmeg and emulsify 30 sec/speed 5.
- Check that you get a fine, spreadable cream.
- Serve warm with toast and sprinkle with parsley.
Tips
- Desalt the cod for 24 hours, changing the water several times.
- You can gratin it in the oven for a few minutes before serving.
- Serve with toasted bread or crudites.
