Ingredients

  • 300 g desalted and flaked cod
  • 200 g peeled potato
  • 2 garlic cloves
  • 100 g extra virgin olive oil
  • 100 g cooking cream
  • White pepper to taste
  • Nutmeg to taste
  • 500 g water
  • Chopped fresh parsley

Step-by-step

Choose your robot:
  1. Put the water in the mixing bowl, place the basket with the chopped potato and set 20 min/Varoma/speed 1.
  2. Check that the potato is tender, remove the basket and set aside.
  3. Empty the water from the mixing bowl and add the garlic, blend 5 sec/speed 7.
  4. Add the flaked cod and the cooked potato.
  5. Blend 15 sec/speed 5 until you get a paste.
  6. With the blades running at speed 4, add the oil and the cream little by little through the lid opening.
  7. Add the pepper and the nutmeg and emulsify 30 sec/speed 5.
  8. Check that you get a fine, spreadable cream.
  9. Serve warm with toast and sprinkle with parsley.

Tips

  • Desalt the cod for 24 hours, changing the water several times.
  • You can gratin it in the oven for a few minutes before serving.
  • Serve with toasted bread or crudites.
