Baked chickpea falafel

Spiced chickpea balls, crispy outside and tender inside.

Ingredients

  • 250 g dried chickpeas soaked for 12 hours
  • 1/2 onion
  • 2 garlic cloves
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 tablespoon chickpea flour
  • 1/2 teaspoon baking powder
  • Olive oil for brushing

Step-by-step

Choose your robot:
  1. Drain the soaked uncooked chickpeas well.
  2. Put the onion, garlic, parsley and cilantro in the mixing bowl and chop 5 sec/speed 5.
  3. Add the chickpeas, the cumin, the ground coriander and the salt.
  4. Blend 20 sec/speed 6 until you get a granular but compact dough.
  5. Add the chickpea flour and the baking powder and mix 15 sec/speed 4.
  6. Let the dough rest for 20 minutes in the fridge.
  7. Shape into balls, flatten them slightly and place them on a baking tray.
  8. Brush with oil and bake 25 min at 200°C, turning halfway through cooking.
  9. Serve with yogurt or tahini sauce.

Tips

  • Do not use cooked chickpeas, they must be soaked raw or they will fall apart.
  • For a fried version, fry the balls in hot oil until golden.
  • Add a pinch of baking soda for a fluffier texture.
