- 1/2 onion
- 2 garlic cloves
- 1 bunch fresh parsley
- 1 bunch fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 tablespoon chickpea flour
- 1/2 teaspoon baking powder
- Olive oil for brushing
Step-by-step
Choose your robot:
- Drain the soaked uncooked chickpeas well.
- Put the onion, garlic, parsley and cilantro in the mixing bowl and chop 5 sec/speed 5.
- Add the chickpeas, the cumin, the ground coriander and the salt.
- Blend 20 sec/speed 6 until you get a granular but compact dough.
- Add the chickpea flour and the baking powder and mix 15 sec/speed 4.
- Let the dough rest for 20 minutes in the fridge.
- Shape into balls, flatten them slightly and place them on a baking tray.
- Brush with oil and bake 25 min at 200°C, turning halfway through cooking.
- Serve with yogurt or tahini sauce.
Tips
- Do not use cooked chickpeas, they must be soaked raw or they will fall apart.
- For a fried version, fry the balls in hot oil until golden.
- Add a pinch of baking soda for a fluffier texture.
