Iced Mate with Lemon (Mate Gelado)
Iced mate tea with lemon, a refreshing drink from Rio's beaches.

Ingredients
- 4 tablespoons roasted mate (chá mate)
- 1 liter water
- 100 g sugar
- Juice of 2 limes
- Ice to taste
Step-by-step

- Heat the water 8 min/90°C/speed 1.
- Add the roasted mate and let it steep 5 min without setting a program.
- Strain the infusion and mix it with the sugar 30 sec/speed 2 until dissolved.
- Let cool and stir in the lime juice.
- Serve well chilled with plenty of ice.
Tips
- Don't boil the mate so it doesn't turn bitter.
- Serve it very cold — it's the classic drink of Rio's summer beaches.
