Ingredients

  • 600 g ripe mango, peeled
  • 150 g brown sugar
  • 100 g apple cider vinegar
  • 1 piece of fresh ginger
  • 1 garlic clove
  • 1 teaspoon mustard seeds
  • 1 pinch of chili and cumin

Step-by-step

Choose your robot:
  1. Put the ginger and garlic in the mixing bowl and chop 4 sec/speed 6.
  2. Add the chopped mango and chop 3 sec/speed 4 to leave some pieces.
  3. Add the sugar, vinegar and spices, mix 5 sec/speed 2.
  4. Place the basket on the lid to prevent splashes.
  5. Set 30 min/Varoma/speed 1 without the measuring cup until it thickens and concentrates.
  6. Check the texture; it should be dense and shiny.
  7. Pack hot into sterilized jars and seal under vacuum.

Tips

  • Accompanies curries, cheeses and grilled meats.
  • The vinegar acts as a natural preservative; keeps up to 3 months sealed.
  • Refrigerate once the jar is opened.
