Mango chutney
Sweet and sour Indian mango sauce with spices.

Ingredients
- 600 g ripe mango, peeled
- 150 g brown sugar
- 100 g apple cider vinegar
- 1 piece of fresh ginger
- 1 garlic clove
- 1 teaspoon mustard seeds
- 1 pinch of chili and cumin
Step-by-step
Choose your robot:
- Put the ginger and garlic in the mixing bowl and chop 4 sec/speed 6.
- Add the chopped mango and chop 3 sec/speed 4 to leave some pieces.
- Add the sugar, vinegar and spices, mix 5 sec/speed 2.
- Place the basket on the lid to prevent splashes.
- Set 30 min/Varoma/speed 1 without the measuring cup until it thickens and concentrates.
- Check the texture; it should be dense and shiny.
- Pack hot into sterilized jars and seal under vacuum.
Tips
- Accompanies curries, cheeses and grilled meats.
- The vinegar acts as a natural preservative; keeps up to 3 months sealed.
- Refrigerate once the jar is opened.
