Ingredients

  • 500 g cauliflower florets
  • 1 onion (80 g)
  • 1 small potato (100 g)
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 600 g vegetable stock
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil, the curry and the cumin and saute 5 min/120°C/speed 1.
  3. Add the cauliflower, the potato and the stock.
  4. Program 20 min/100°C/speed 1 with the basket on top of the lid.
  5. Season with salt and pepper to taste.
  6. Blend the soup 1 min/speed 5-9 progressively without adding cream.
  7. Check the silky texture and serve hot.

Tips

  • Nutritional note: cauliflower is very low in calories and filling.
  • The curry adds flavor and an anti-inflammatory touch from the turmeric.
  • The potato gives creaminess without the need for cream.
