Spiced cauliflower soup without cream
A smooth cauliflower soup with curry, creamy without dairy.

Ingredients
- 500 g cauliflower florets
- 1 onion (80 g)
- 1 small potato (100 g)
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 600 g vegetable stock
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 4 sec/speed 5.
- Add the oil, the curry and the cumin and saute 5 min/120°C/speed 1.
- Add the cauliflower, the potato and the stock.
- Program 20 min/100°C/speed 1 with the basket on top of the lid.
- Season with salt and pepper to taste.
- Blend the soup 1 min/speed 5-9 progressively without adding cream.
- Check the silky texture and serve hot.
Tips
- Nutritional note: cauliflower is very low in calories and filling.
- The curry adds flavor and an anti-inflammatory touch from the turmeric.
- The potato gives creaminess without the need for cream.
