Ingredients
- 4 dried black chilhuacle peppers
- 3 mulato peppers
- 2 pasilla peppers
- 1 tomato
- 2 tomatillos
- 1 onion
- 3 garlic cloves
- 40 g sesame seeds
- 30 g almonds
- 30 g raisins
- 1 charred tortilla
- 1 plantain
- 40 g dark chocolate
- 1 cinnamon stick
- 2 cloves
- Salt to taste
- 600 g chicken broth
- Chicken or turkey pieces
Step-by-step

- Char the seeded peppers on a griddle until very dark, then rehydrate them 10 minutes.
- Put the peppers, tomato, tomatillos, onion, garlic, almonds, raisins, plantain, tortilla, cinnamon and cloves in the mixing bowl. Blend 1 min/speed 10.
- Add 300 g broth and blend 40 sec/speed 8 into a very smooth paste.
- Set 30 min/100°C/speed 2, adding the remaining broth gradually.
- Add the chocolate and salt; cook 10 min/90°C/speed 2.
- Serve over the chicken and sprinkle with sesame seeds.
Tips
- The almost-black color comes from deeply charring the peppers.
- Balance the bitterness with a pinch of sugar if needed.
