Ingredients
- 800 g potatoes
- 200 g flour
- 1 egg
- 1 pinch nutmeg
- 400 g tomato sauce
- 60 g grated Parmesan
- Salt
- 1500 g water for boiling
Step-by-step

- Cook the potatoes with their skin in the Varoma dish with 700 g water in the mixing bowl 30 min/Varoma/speed 1 until tender.
- Peel and mash the hot potatoes, then let cool slightly.
- Put the mash, flour, egg, nutmeg and salt in the mixing bowl and knead 1 min/dough mode.
- Shape ropes on a floured surface, cut into pieces and mark with a fork.
- Put salted water in the mixing bowl and heat 10 min/Varoma/speed 1, then boil the gnocchi until they float.
- Drain, mix with the hot tomato sauce and serve with Parmesan.
Tips
- Don't add too much flour so the gnocchi stay light.
- Work the dough just enough so it doesn't become tough.
