Tomato and basil bruschetta

Ingredients

  • 1 rustic bread loaf
  • 4 ripe tomatoes
  • 1 garlic clove
  • A few fresh basil leaves
  • 40 g extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the basil in the mixing bowl and chop 3 sec/speed 5, remove and set aside.
  2. Chop the tomatoes and put them in the mixing bowl, chop 3 sec/speed 4 leaving texture.
  3. Pass the tomato to a colander to drain the excess liquid.
  4. Mix the tomato with the basil, the oil, the vinegar, the salt and the pepper in a bowl.
  5. Cut the bread into slices and toast them in the oven or toaster.
  6. Rub each hot slice with the garlic clove.
  7. Spread the tomato mixture over the toasts.
  8. Drizzle with a thread of olive oil and serve immediately.

Tips

  • Drain the tomato well so the bread does not go soggy.
  • Use good quality bread and very ripe tomatoes.
  • Assemble the bruschetta just before serving.
