Tomato and basil bruschetta
Italian toasts with fresh tomato, garlic, basil and olive oil.

Ingredients
- 1 rustic bread loaf
- 4 ripe tomatoes
- 1 garlic clove
- A few fresh basil leaves
- 40 g extra virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the basil in the mixing bowl and chop 3 sec/speed 5, remove and set aside.
- Chop the tomatoes and put them in the mixing bowl, chop 3 sec/speed 4 leaving texture.
- Pass the tomato to a colander to drain the excess liquid.
- Mix the tomato with the basil, the oil, the vinegar, the salt and the pepper in a bowl.
- Cut the bread into slices and toast them in the oven or toaster.
- Rub each hot slice with the garlic clove.
- Spread the tomato mixture over the toasts.
- Drizzle with a thread of olive oil and serve immediately.
Tips
- Drain the tomato well so the bread does not go soggy.
- Use good quality bread and very ripe tomatoes.
- Assemble the bruschetta just before serving.
