Wholemeal sandwich bread
Sandwich bread with wholemeal flour rich in fibre.
Vegetarian
Ingredients
- 300 g wholemeal flour
- 200 g strong bread flour
- 300 g warm water
- 20 g fresh yeast
- 30 g olive oil
- 1 tablespoon honey
- 9 g salt
Step-by-step
Choose your robot:
- Put the water, yeast and honey in the mixing bowl and set 2 min/37°C/speed 2.
- Add both flours, the oil and the salt and mix 20 sec/speed 6.
- Knead 4 min/closed bowl/dough mode.
- Let the dough rise in a covered bowl until doubled in volume, about 60 min.
- Degas and shape a cylinder the size of the tin.
- Place in a greased rectangular loaf tin.
- Let it rise covered until it rises above the tin, about 40 min.
- Dust a little flour or seeds on top.
- Bake in a preheated oven at 190°C for 35 min.
- Unmould and let cool on a rack before slicing.
Tips
- Honey helps the wholemeal crumb stay moister.
- Add sunflower or flax seeds to the dough for more texture.
