Wholemeal sandwich bread

Ingredients

  • 300 g wholemeal flour
  • 200 g strong bread flour
  • 300 g warm water
  • 20 g fresh yeast
  • 30 g olive oil
  • 1 tablespoon honey
  • 9 g salt

Step-by-step

Choose your robot:
  1. Put the water, yeast and honey in the mixing bowl and set 2 min/37°C/speed 2.
  2. Add both flours, the oil and the salt and mix 20 sec/speed 6.
  3. Knead 4 min/closed bowl/dough mode.
  4. Let the dough rise in a covered bowl until doubled in volume, about 60 min.
  5. Degas and shape a cylinder the size of the tin.
  6. Place in a greased rectangular loaf tin.
  7. Let it rise covered until it rises above the tin, about 40 min.
  8. Dust a little flour or seeds on top.
  9. Bake in a preheated oven at 190°C for 35 min.
  10. Unmould and let cool on a rack before slicing.

Tips

  • Honey helps the wholemeal crumb stay moister.
  • Add sunflower or flax seeds to the dough for more texture.
