Cucumber raita

Refreshing Indian sauce of yogurt and cucumber to accompany curries.

Ingredients

  • 300 g plain yogurt
  • 1 cucumber
  • 1/2 teaspoon ground cumin
  • 1 handful fresh mint
  • 1 handful fresh coriander
  • 1/2 teaspoon salt
  • 1 pinch of pepper

Step-by-step

Choose your robot:
  1. Put the cucumber in pieces in the mixing bowl and chop 3 sec/speed 4, drain the excess water.
  2. Add the mint and the coriander and chop 2 sec/speed 4.
  3. Add the yogurt, the cumin, the salt and the pepper.
  4. Mix 15 sec/speed 3 without blending completely.
  5. Chill in the fridge at least 20 minutes before serving.

Tips

  • Grate the cucumber if you prefer a finer texture.
  • Perfect to tone down the heat of a curry.
