Ingredients
- 300 g flour
- 3 eggs
- 100 ml water
- 1 pinch nutmeg
- 1 teaspoon salt
- 2 liters water for boiling
- 30 g butter
Step-by-step

- Put the flour, eggs, water, nutmeg and salt in the mixing bowl.
- Mix 30 sec, speed 4, until you get a thick, sticky dough.
- Let the dough rest 10 minutes.
- Boil the 2 liters of salted water in a pot and press the dough through a large-holed colander into the water.
- Cook the spätzle until they float, remove with a slotted spoon and sauté with the butter.
- Serve hot as a side dish or main course.
Tips
- Serve with melted cheese and fried onion to make käsespätzle.
- The dough should fall in ribbons — not too runny, not too stiff.
