Colombian Almojábanas
Soft, fluffy rolls made with curd cheese and corn flour.

Ingredients
- 300 g fresh curd cheese or crumbled farmer's cheese
- 150 g pre-cooked white corn flour
- 100 g sweet cassava starch
- 2 eggs
- 60 g softened butter
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 pinch salt
Step-by-step

- Put the curd cheese in the mixing bowl and blend 10 sec/speed 6.
- Add the eggs, butter and sugar and mix 20 sec/speed 4.
- Add the corn flour, cassava starch, baking powder and salt and knead 2 min/closed lid/dough mode.
- Let the dough rest 10 minutes so it develops body.
- Shape medium balls with greased hands and place on a tray lined with baking paper.
- Bake at 190°C for 20 minutes until golden and puffed.
- Serve warm with hot chocolate.
Tips
- If the dough is too soft, add a bit more cassava starch.
- The cheese should be a bit salty for the traditional flavor.
