Asturian rice pudding

Ingredients

  • 1 litre of whole milk
  • 120 g of round rice
  • 120 g of sugar
  • the peel of one lemon
  • 1 cinnamon stick
  • 30 g of butter
  • ground cinnamon for dusting

Step-by-step

Choose your robot:
  1. Put the milk, the lemon peel and the cinnamon stick in the mixing bowl and program 10 min/100°C/speed 1.
  2. Add the rice and program 40 min/90°C/reverse/spoon speed.
  3. Add the sugar and the butter and program 5 min/90°C/reverse/spoon speed.
  4. Remove the lemon peel and the cinnamon stick.
  5. Distribute into bowls and let it cool down.
  6. Dust with ground cinnamon before serving.
  7. Refrigerate at least 2 hours so it sets.

Tips

  • Use reverse so as not to break the rice grain.
  • If you prefer it looser, reduce the cooking time a little.
