Ingredients
- 3 eggs
- 200 g of sugar
- 200 g of flour
- 120 ml of mild olive oil
- Juice and zest of 2 lemons
- 1 sachet of baking powder (16 g)
- 80 g of sugar for the syrup
- 1 pinch of salt
Step-by-step
Choose your robot:
- Preheat the oven to 180C.
- Add the sugar and the lemon zest and pulverize 10 sec/speed 10.
- Add the eggs and beat 2 min/speed 4.
- Add the oil and half of the lemon juice and mix 20 sec/speed 3.
- Add the flour, the baking powder and the salt and mix 20 sec/speed 3.
- Pour into a greased loaf mold and bake 40 min at 180C.
- Heat the rest of the juice with the sugar 3 min/90C/speed 1 for the syrup.
- Prick the hot sponge and soak it with the syrup.
- Let it cool before unmolding.
Tips
- Pulverizing the sugar with the zest intensifies the aroma.
- The syrup absorbs better with the sponge hot.
- Decorate with a lemon glaze if you want more tartness.
