Colombian Buñuelos
Fried cheese and starch balls, golden and fluffy, a Christmas classic.

Ingredients
- 300 g coastal-style cheese, grated
- 150 g cassava starch
- 30 g pre-cooked corn flour
- 2 eggs
- 1 teaspoon sugar
- 1 pinch salt
- Plenty of oil for frying
Step-by-step

- Put the cheese in the mixing bowl and blend 15 sec/speed 7.
- Add the eggs, sugar and salt and mix 20 sec/speed 4.
- Add the cassava starch and corn flour and knead 2 min/closed lid/dough mode.
- Shape smooth, walnut-sized balls with wet hands.
- Heat plenty of oil over medium-low heat, not too hot.
- Fry the buñuelos, turning them so they roll and brown evenly, about 6 minutes.
- Drain on paper towels and serve warm.
Tips
- If the oil is too hot, the buñuelo browns on the outside and stays raw inside.
- A smooth dough keeps the buñuelo from bursting while frying.
