Ingredients

  • 1 kg of beef round
  • 100 g of serrano ham in strips
  • 1 carrot in batons
  • 2 onions
  • 2 carrots for the sauce
  • 2 garlic cloves
  • 200 g of white wine
  • 300 g of meat stock
  • 50 g of olive oil
  • 1 bay leaf
  • 1 teaspoon of salt

Step-by-step

Choose your robot:
  1. Lard the round by inserting ham strips and carrot batons, season and brown it in a pan.
  2. Put the onions, the carrots and the garlic in the mixing bowl and chop 5 sec/speed 5.
  3. Add the oil and saute 8 min/120°C/spoon speed.
  4. Pour in the white wine and let it evaporate 3 min/Varoma/spoon speed without the measuring cup.
  5. Add the stock, the bay leaf and the salt and place the round in the mixing bowl.
  6. Set 55 min/100°C/reverse/spoon speed, turning it over halfway.
  7. Remove the meat, let it cool down and blend the sauce 1 min/speed 7.
  8. Slice the round thinly once cold.
  9. Heat the slices in the sauce 5 min/90°C/reverse/spoon speed and serve.

Tips

  • A larding needle makes the larding process much easier.
  • Let the meat cool before slicing it for perfect slices.
