Onion-stewed baby squid
Tender baby squid stewed with plenty of caramelized onion.

Ingredients
- 700 g cleaned baby squid
- 3 onions
- 2 garlic cloves
- 100 g white wine
- 50 g extra virgin olive oil
- 1 bay leaf
- 1 teaspoon sugar
- 1 bunch of parsley
- Salt to taste
- Pepper to taste
Step-by-step
Choose your robot:
- Put the onions and garlic in the mixing bowl and chop 4 sec/speed 4.
- Add the oil, the bay leaf and the sugar and saute 15 min/120°C/spoon speed.
- Check that the onion is well browned and mellow.
- Add the baby squid and saute 3 min/100°C/reverse/spoon speed.
- Pour in the white wine, season with salt and pepper and program 15 min/100°C/reverse/spoon speed.
- Check that the baby squid are tender; if not, add a few more minutes.
- Sprinkle the chopped parsley and mix 5 sec/reverse/spoon speed.
- Let it rest 5 minutes with the lid on and serve hot.
Tips
- Patience with the onion is key so it turns out sweet.
- Serve with fried potatoes or white rice.
- You can save the ink for another preparation.
