Onion-stewed baby squid

Ingredients

  • 700 g cleaned baby squid
  • 3 onions
  • 2 garlic cloves
  • 100 g white wine
  • 50 g extra virgin olive oil
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 bunch of parsley
  • Salt to taste
  • Pepper to taste

Step-by-step

Choose your robot:
  1. Put the onions and garlic in the mixing bowl and chop 4 sec/speed 4.
  2. Add the oil, the bay leaf and the sugar and saute 15 min/120°C/spoon speed.
  3. Check that the onion is well browned and mellow.
  4. Add the baby squid and saute 3 min/100°C/reverse/spoon speed.
  5. Pour in the white wine, season with salt and pepper and program 15 min/100°C/reverse/spoon speed.
  6. Check that the baby squid are tender; if not, add a few more minutes.
  7. Sprinkle the chopped parsley and mix 5 sec/reverse/spoon speed.
  8. Let it rest 5 minutes with the lid on and serve hot.

Tips

  • Patience with the onion is key so it turns out sweet.
  • Serve with fried potatoes or white rice.
  • You can save the ink for another preparation.
