Guatemalan chirmol

Fresh sauce of roasted tomato, onion and cilantro to accompany grilled meats.

Ingredients

  • 4 ripe tomatoes
  • 1 medium onion
  • 1 bunch of fresh cilantro
  • 2 spring onions or green onions
  • 1 green chili, optional
  • 1 lime (its juice)
  • 1 teaspoon salt
  • 1 tablespoon oil

Step-by-step

Choose your robot:
  1. Roast the whole tomatoes on a griddle or pan until the skin lightly chars; set aside.
  2. Place the onion and spring onion in the mixing bowl and chop 3 sec/speed 4; set aside.
  3. Place the roasted tomatoes and the chili in the mixing bowl and chop 4 sec/speed 4 aiming for a rustic texture.
  4. Add the chopped onion, the cilantro, the lime juice, the salt and the oil.
  5. Mix 5 sec/reverse/speed 3 to combine without making a puree.
  6. Adjust the salt and let rest 10 minutes so the flavors settle.
  7. Serve with grilled meat, beans or tortillas.

Tips

  • Roasting the tomato gives the smoky flavor characteristic of chirmol.
  • Do not process too much: it should keep visible pieces.
  • It is ideal alongside a good Guatemalan churrasco.
