Ingredients
- 4 ripe tomatoes
- 1 medium onion
- 1 bunch of fresh cilantro
- 2 spring onions or green onions
- 1 green chili, optional
- 1 lime (its juice)
- 1 teaspoon salt
- 1 tablespoon oil
Step-by-step
Choose your robot:
- Roast the whole tomatoes on a griddle or pan until the skin lightly chars; set aside.
- Place the onion and spring onion in the mixing bowl and chop 3 sec/speed 4; set aside.
- Place the roasted tomatoes and the chili in the mixing bowl and chop 4 sec/speed 4 aiming for a rustic texture.
- Add the chopped onion, the cilantro, the lime juice, the salt and the oil.
- Mix 5 sec/reverse/speed 3 to combine without making a puree.
- Adjust the salt and let rest 10 minutes so the flavors settle.
- Serve with grilled meat, beans or tortillas.
Tips
- Roasting the tomato gives the smoky flavor characteristic of chirmol.
- Do not process too much: it should keep visible pieces.
- It is ideal alongside a good Guatemalan churrasco.
