Homemade tomato sauce
Slow and aromatic natural tomato sofrito for pasta and stews.

Ingredients
- 800 g of chopped ripe tomato
- 1 medium onion
- 1 clove of garlic
- 40 g of extra virgin olive oil
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 bay leaf
- Pepper to taste
Step-by-step
Choose your robot:
- Put the onion and garlic in the mixing bowl and chop 5 sec/speed 5.
- Add the oil and saute 7 min/120°C/speed 1.
- Add the tomato and blend 20 sec/speed 5.
- Add the sugar, salt, pepper and bay leaf.
- Set 20 min/Varoma/speed 1 without the measuring cup to reduce.
- Remove the bay leaf and, if you want it smooth, blend 30 sec/speed 6 and serve.
Tips
- The sugar corrects the acidity of the tomato.
- Place the basket on the lid to avoid splashes while reducing.
- Freeze in portions to always have ready sauce.
