Ingredients
- 500 g of strong flour
- 100 g of sugar
- 2 eggs
- 100 ml of warm milk
- 80 g of butter
- 25 g of fresh yeast
- Zest of 1 lemon
- Candied fruit to taste
- 50 g of pine nuts
- 1 pinch of salt
Step-by-step
Choose your robot:
- Dissolve the yeast in the warm milk.
- Add the flour, the sugar, the eggs, the zest, the salt and the milk and knead 5 min/dough mode.
- Add the butter and knead another 4 min/dough mode.
- Let the dough rise covered 1 hour until it doubles.
- Stretch the dough onto a tray giving it an oval shape.
- Let it rise another hour, brush with egg and decorate with fruit and pine nuts.
- Sprinkle sugar moistened with a few drops of water on top.
- Preheat the oven to 180C and bake 20 min until golden.
- Let it cool before cutting.

- The two risings are essential for a fluffy crumb.
- Typical of the San Juan festival.
