Coca de San Juan

Catalan brioche coca with candied fruit and pine nuts.

Ingredients

  • 500 g of strong flour
  • 100 g of sugar
  • 2 eggs
  • 100 ml of warm milk
  • 80 g of butter
  • 25 g of fresh yeast
  • Zest of 1 lemon
  • Candied fruit to taste
  • 50 g of pine nuts
  • 1 pinch of salt

Step-by-step

Choose your robot:
  1. Dissolve the yeast in the warm milk.
  2. Add the flour, the sugar, the eggs, the zest, the salt and the milk and knead 5 min/dough mode.
  3. Add the butter and knead another 4 min/dough mode.
  4. Let the dough rise covered 1 hour until it doubles.
  5. Stretch the dough onto a tray giving it an oval shape.
  6. Let it rise another hour, brush with egg and decorate with fruit and pine nuts.
  7. Sprinkle sugar moistened with a few drops of water on top.
  8. Preheat the oven to 180C and bake 20 min until golden.
  9. Let it cool before cutting.

  • The two risings are essential for a fluffy crumb.
  • Typical of the San Juan festival.
  • You can fill it with pastry cream.
