Cod croquettes

Creamy croquettes of shredded cod with a smooth bechamel.

Ingredients

  • 250 g desalted and shredded cod
  • 1 onion
  • 70 g extra virgin olive oil
  • 120 g flour
  • 700 g milk
  • 1 pinch of nutmeg
  • 2 eggs
  • Breadcrumbs to taste
  • Oil for frying
  • Salt to taste
  • Pepper to taste

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil and saute 7 min/120°C/spoon speed.
  3. Add the shredded cod and saute 3 min/100°C/reverse/spoon speed.
  4. Add the flour and saute 2 min/120°C/speed 3.
  5. Pour in the milk, the nutmeg and the pepper and program 12 min/100°C/speed 4.
  6. Check that the bechamel is thick and lump-free; if not, add 2 more min.
  7. Pour the dough into a dish, cover with cling film touching the surface and chill in the fridge for 3 hours.
  8. Shape the croquettes, coat them in beaten egg and breadcrumbs.
  9. Fry them in plenty of hot oil until golden and drain on paper.

Tips

  • Let the dough cool well so it is easy to handle.
  • A double coating prevents them from bursting when frying.
  • You can freeze the croquettes once shaped.
