Ingredients
- 250 g desalted and shredded cod
- 1 onion
- 70 g extra virgin olive oil
- 120 g flour
- 700 g milk
- 1 pinch of nutmeg
- 2 eggs
- Breadcrumbs to taste
- Oil for frying
- Salt to taste
- Pepper to taste
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and saute 7 min/120°C/spoon speed.
- Add the shredded cod and saute 3 min/100°C/reverse/spoon speed.
- Add the flour and saute 2 min/120°C/speed 3.
- Pour in the milk, the nutmeg and the pepper and program 12 min/100°C/speed 4.
- Check that the bechamel is thick and lump-free; if not, add 2 more min.
- Pour the dough into a dish, cover with cling film touching the surface and chill in the fridge for 3 hours.
- Shape the croquettes, coat them in beaten egg and breadcrumbs.
- Fry them in plenty of hot oil until golden and drain on paper.
Tips
- Let the dough cool well so it is easy to handle.
- A double coating prevents them from bursting when frying.
- You can freeze the croquettes once shaped.
