Ingredients

  • 1 litre of whole sheep's milk
  • 1 sachet of powdered rennet
  • honey to taste
  • chopped walnuts to serve

Step-by-step

Choose your robot:
  1. Put the milk in the mixing bowl and program 6 min/37°C/speed 2.
  2. Add the powdered rennet and mix 10 sec/speed 4.
  3. Distribute quickly into clay bowls.
  4. Let it rest at room temperature 30 minutes without moving it.
  5. Refrigerate at least 2 hours until it fully sets.
  6. Serve with a drizzle of honey and walnuts on top.

Tips

  • Do not move the bowls while it sets or it will not take body.
  • The temperature of 37 degrees is key for the rennet to act.
