Simple Basque-Navarrese dessert of curdled milk with honey.

Ingredients
- 1 litre of whole sheep's milk
- 1 sachet of powdered rennet
- honey to taste
- chopped walnuts to serve
Step-by-step
Choose your robot:
- Put the milk in the mixing bowl and program 6 min/37°C/speed 2.
- Add the powdered rennet and mix 10 sec/speed 4.
- Distribute quickly into clay bowls.
- Let it rest at room temperature 30 minutes without moving it.
- Refrigerate at least 2 hours until it fully sets.
- Serve with a drizzle of honey and walnuts on top.
Tips
- Do not move the bowls while it sets or it will not take body.
- The temperature of 37 degrees is key for the rennet to act.
