Ingredients

  • 800 g quinces, peeled and cored
  • 600 g sugar
  • The juice of 1 lemon

Step-by-step

Choose your robot:
  1. Chop the quinces in the mixing bowl 5 sec/speed 5.
  2. Add the sugar and lemon juice, mix 10 sec/speed 4.
  3. Place the basket on the lid to prevent splashes.
  4. Set 45 min/Varoma/speed 2 without the measuring cup until it takes on a reddish color.
  5. Blend 1 min/speed 5-10 for a completely smooth paste.
  6. Pour into a mold lined with cling film and smooth the surface.
  7. Let cool and set at room temperature for at least 24 hours before unmolding.

Tips

  • The more it reduces, the firmer the paste will be.
  • Store in the fridge wrapped in cling film for up to 1 month.
  • Serve with aged or fresh cheese as a classic dessert.
