Quince paste
Traditional firm quince paste to cut into slices.

Ingredients
- 800 g quinces, peeled and cored
- 600 g sugar
- The juice of 1 lemon
Step-by-step
Choose your robot:
- Chop the quinces in the mixing bowl 5 sec/speed 5.
- Add the sugar and lemon juice, mix 10 sec/speed 4.
- Place the basket on the lid to prevent splashes.
- Set 45 min/Varoma/speed 2 without the measuring cup until it takes on a reddish color.
- Blend 1 min/speed 5-10 for a completely smooth paste.
- Pour into a mold lined with cling film and smooth the surface.
- Let cool and set at room temperature for at least 24 hours before unmolding.
Tips
- The more it reduces, the firmer the paste will be.
- Store in the fridge wrapped in cling film for up to 1 month.
- Serve with aged or fresh cheese as a classic dessert.
