Ingredients
- 600 g peeled shrimp
- 400 ml coconut milk
- 2 tomatoes
- 1 red onion
- 1 red bell pepper
- 3 garlic cloves
- 2 tablespoons annatto oil
- 1 teaspoon cumin
- 1 bunch cilantro and basil
- Juice of 1 lime
- Salt and pepper to taste
Step-by-step

- Put the tomato, onion, bell pepper and garlic in the mixing bowl and blend 8 sec/speed 6.
- Add the annatto oil and sauté 8 min/120°C/speed 1.
- Add the coconut milk, cumin, salt and pepper and cook 8 min/95°C/speed 1.
- Add the shrimp and cook 7 min/90°C/reverse/spoon speed.
- Add the lime juice and the chopped cilantro and basil and mix 1 min/reverse/spoon speed.
- Serve with white rice and patacones.
Tips
- Don't overcook the shrimp so they stay juicy.
- Fresh basil is typical of Esmeraldas-style encocado.
