Ingredients
- 8 thin beef fillets (chuck)
- 300 g of assorted mushrooms
- 1 onion
- 2 ripe tomatoes
- 2 garlic cloves
- 100 g of white wine
- 400 g of meat stock
- 50 g of almonds and hazelnuts (ground mix)
- 40 g of olive oil
- Flour for coating
- 1 teaspoon of salt
Step-by-step

- Season and flour the fillets and brown them in a pan, then set them aside.
- Put the onion, the garlic and the tomatoes in the mixing bowl and chop 5 sec/speed 5.
- Add the oil and saute 8 min/120°C/spoon speed.
- Pour in the white wine and let it evaporate 3 min/Varoma/spoon speed without the measuring cup.
- Add the stock and the salt and blend the sauce 30 sec/speed 6.
- Fit the butterfly, add the fillets and the mushrooms and set 25 min/100°C/reverse/spoon speed.
- Add the ground nut mix and set 10 min/100°C/reverse/spoon speed.
- Check that the meat is tender and the sauce is bound.
- Adjust the salt and let it rest before serving.
Tips
- The ground nut mix is key to the traditional flavor of fricando.
- If you find dried fairy ring mushrooms, hydrate them for a more authentic flavor.
