Ingredients

  • 250 g of flour
  • 125 g of cold butter in cubes
  • 100 g of icing sugar
  • 1 egg
  • Zest of 1 lemon
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract

Step-by-step

Choose your robot:
  1. Add the icing sugar, the flour and the salt to the mixing bowl and mix 5 sec/speed 6.
  2. Add the butter in cubes and mix 15 sec/speed 6 until sandy.
  3. Add the egg, the vanilla and the zest and knead 20 sec/dough mode.
  4. Form a ball, wrap it in cling film and refrigerate 30 min.
  5. Preheat the oven to 180C.
  6. Roll out the dough with a rolling pin to half a centimeter and cut with cutters.
  7. Place the cookies on a tray with baking paper.
  8. Bake 12 min at 180C until the edges start to brown.
  9. Let cool on a rack so they harden.

Tips

  • Cold dough is easier to handle.
  • Do not overbake them or they turn bitter.
  • Decorate with royal icing once cold.
