Ingredients
- 250 g of flour
- 125 g of cold butter in cubes
- 100 g of icing sugar
- 1 egg
- Zest of 1 lemon
- 1 pinch of salt
- 1 teaspoon of vanilla extract
Step-by-step
Choose your robot:
- Add the icing sugar, the flour and the salt to the mixing bowl and mix 5 sec/speed 6.
- Add the butter in cubes and mix 15 sec/speed 6 until sandy.
- Add the egg, the vanilla and the zest and knead 20 sec/dough mode.
- Form a ball, wrap it in cling film and refrigerate 30 min.
- Preheat the oven to 180C.
- Roll out the dough with a rolling pin to half a centimeter and cut with cutters.
- Place the cookies on a tray with baking paper.
- Bake 12 min at 180C until the edges start to brown.
- Let cool on a rack so they harden.
Tips
- Cold dough is easier to handle.
- Do not overbake them or they turn bitter.
- Decorate with royal icing once cold.
