Drinkable Watermelon Gazpacho

Light fruity watermelon and tomato gazpacho to drink.

Ingredients

  • 400 g seedless watermelon
  • 300 g ripe tomatoes
  • 1 small piece of cucumber (80 g)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 pinch of salt
  • 4 ice cubes

Step-by-step

Choose your robot:
  1. Chop the watermelon, the tomatoes and the cucumber and put them in the mixing bowl.
  2. Add the oil, the vinegar, the salt and the ice.
  3. Blend 1 min/speed 5-10 progressive until very fine.
  4. Strain with the basket for a more drinkable texture.
  5. Chill in the fridge for 1 hour and serve in glasses.

Tips

  • The watermelon adds natural sweetness and reduces the acidity of the tomato.
  • Serve very cold as an appetizer on hot days.
