Catalan-style broad beans

Ingredients

  • 600 g tender broad beans
  • 1 onion
  • 3 garlic cloves
  • 1 leek
  • 50 g extra virgin olive oil
  • 1 teaspoon sweet paprika
  • A few mint leaves
  • 400 g vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Chop the onion, the leek and the garlic 4 sec/speed 5 and scrape down the sides with the spatula.
  2. Add the oil and saute 8 min/Varoma/spoon speed.
  3. Add the paprika and mix 20 sec/Varoma/spoon speed.
  4. Add the broad beans, the broth, the bay leaf, the mint, the salt and the pepper.
  5. Set 22 min/100C/reverse/spoon speed.
  6. Check that the broad beans are tender and remove the bay leaf.
  7. Let rest and serve warm.

Tips

  • Mint is the hallmark of Catalan-style broad beans, do not omit it.
  • If the broad beans are large, remove the outer skin for more finesse.
  • In the non-vegan version black botifarra sausage is added to the saute.
