Catalan-style broad beans
Tender broad beans stewed with onion, mint and a sweet touch.

Ingredients
- 600 g tender broad beans
- 1 onion
- 3 garlic cloves
- 1 leek
- 50 g extra virgin olive oil
- 1 teaspoon sweet paprika
- A few mint leaves
- 400 g vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Chop the onion, the leek and the garlic 4 sec/speed 5 and scrape down the sides with the spatula.
- Add the oil and saute 8 min/Varoma/spoon speed.
- Add the paprika and mix 20 sec/Varoma/spoon speed.
- Add the broad beans, the broth, the bay leaf, the mint, the salt and the pepper.
- Set 22 min/100C/reverse/spoon speed.
- Check that the broad beans are tender and remove the bay leaf.
- Let rest and serve warm.
Tips
- Mint is the hallmark of Catalan-style broad beans, do not omit it.
- If the broad beans are large, remove the outer skin for more finesse.
- In the non-vegan version black botifarra sausage is added to the saute.
