Meringue Milk

Ingredients

  • 750 ml whole milk
  • 100 g sugar
  • 1 lemon peel
  • 1 cinnamon stick
  • 2 egg whites
  • Ground cinnamon for sprinkling

Step-by-step

Choose your robot:
  1. Put the milk, the lemon peel and the cinnamon stick in the mixing bowl.
  2. Heat 8 min/90 C/speed 2 and infuse, then remove the peel and the cinnamon.
  3. Add the sugar and mix 20 sec/speed 3, let it cool and freeze 2 hours.
  4. Insert the butterfly, add the egg whites and whip 4 min/speed 3.5.
  5. Fold the whipped egg whites into the semi-frozen milk in a folding motion.
  6. Serve iced with cinnamon sprinkled on top.

Tips

  • Serve it semi-iced with a creamy slush texture.
  • Make sure the mixing bowl is clean and dry to whip the egg whites.
