Ingredients

  • 3 eggs
  • 190 g of sugar
  • 190 g of pastry flour
  • 150 ml of mild olive oil
  • 60 ml of milk
  • 1 sachet of baking powder (16 g)
  • Zest of 1 lemon
  • 1 pinch of salt

Step-by-step

Choose your robot:
  1. Put the butterfly on, add the eggs and the sugar and beat 4 min/speed 4.
  2. Add the oil and the milk and mix 30 sec/speed 3.
  3. Remove the butterfly, add the flour, the baking powder, the zest and the salt and mix 20 sec/speed 3.
  4. Let the batter rest 30 min in the fridge for a higher dome.
  5. Preheat the oven to 200C.
  6. Divide the batter into liners filling two thirds and sprinkle sugar on top.
  7. Bake 15 min at 200C until golden.
  8. Let cool on a rack.

Tips

  • Resting in the cold is the key to the dome.
  • Place the liners in a rigid mold so they rise straight.
  • Always bake with the oven very hot.
