Ingredients
- 3 eggs
- 190 g of sugar
- 190 g of pastry flour
- 150 ml of mild olive oil
- 60 ml of milk
- 1 sachet of baking powder (16 g)
- Zest of 1 lemon
- 1 pinch of salt
Step-by-step
Choose your robot:
- Put the butterfly on, add the eggs and the sugar and beat 4 min/speed 4.
- Add the oil and the milk and mix 30 sec/speed 3.
- Remove the butterfly, add the flour, the baking powder, the zest and the salt and mix 20 sec/speed 3.
- Let the batter rest 30 min in the fridge for a higher dome.
- Preheat the oven to 200C.
- Divide the batter into liners filling two thirds and sprinkle sugar on top.
- Bake 15 min at 200C until golden.
- Let cool on a rack.
Tips
- Resting in the cold is the key to the dome.
- Place the liners in a rigid mold so they rise straight.
- Always bake with the oven very hot.
