Cruceño Majadito
Creamy rice from eastern Bolivia with jerky or beef and fried egg.

Ingredients
- 300 g rice
- 250 g shredded dried beef (charque) or shredded beef
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 tablespoon achiote
- 800 ml beef broth
- 4 eggs
- 2 ripe plantains for frying
- Oil, salt, cumin and oregano to taste
Step-by-step

- Sauté the onion, tomato, bell pepper and achiote with 30 g oil 5 min/120°C/speed 1.
- Add the shredded dried beef, cumin and oregano: 4 min/120°C/reverse/spoon speed.
- Add the rice and mix 2 min/100°C/reverse/spoon speed.
- Pour in the broth and cook 18 min/100°C/reverse/spoon speed until the rice is fluffy and moist.
- Separately, fry the ripe plantains and eggs.
- Serve the majadito topped with a fried egg and fried plantain on the side.
Tips
- It should turn out between fluffy rice and a dry soup, slightly moist.
- If using charque, soak it beforehand to reduce the saltiness.
