Ingredients

  • 800 g strawberries, cleaned and hulled
  • 400 g sugar
  • The juice of 1 lemon
  • 1 teaspoon pectin (optional)

Step-by-step

Choose your robot:
  1. Put the strawberries in the mixing bowl and chop 4 sec/speed 5.
  2. Add the sugar and lemon juice, mix 5 sec/speed 3.
  3. Place the basket on the lid instead of the measuring cup to prevent splashes.
  4. Set 30 min/100C/speed 2 to evaporate the water.
  5. If you want a finer texture, blend 30 sec/speed 5 at the end.
  6. Check the setting point by placing a drop on a cold plate; if it does not slide, it is ready.
  7. Pour hot into sterilized jars, seal and turn upside down for 10 minutes to create a vacuum.

Tips

  • Sterilize the jars by boiling them for 10 minutes before filling them.
  • Store in a cool, dark place for up to 1 year; once opened, in the fridge.
  • Lemon adds acidity and helps with natural setting.
