Ingredients

  • 800 g peaches, peeled and pitted
  • 350 g sugar
  • The juice of 1 lemon
  • 1 cinnamon stick (optional)

Step-by-step

Choose your robot:
  1. Chop the peaches in the mixing bowl 4 sec/speed 4.
  2. Add the sugar and lemon juice, mix 5 sec/speed 3.
  3. Add the cinnamon stick and place the basket on the lid to prevent splashes.
  4. Set 30 min/100C/speed 2 without the measuring cup to evaporate.
  5. Remove the cinnamon and blend 20 sec/speed 5 for a smooth texture.
  6. Check the setting point with a drop on a cold plate.
  7. Pack hot into sterilized jars and seal under vacuum.

Tips

  • Blanch the peaches for 1 minute in boiling water to peel them easily.
  • Keep the jars upside down until they cool to seal the vacuum.
  • A pinch of cinnamon enhances the peach aroma.
