Ingredients
- 800 g peaches, peeled and pitted
- 350 g sugar
- The juice of 1 lemon
- 1 cinnamon stick (optional)
Step-by-step

- Chop the peaches in the mixing bowl 4 sec/speed 4.
- Add the sugar and lemon juice, mix 5 sec/speed 3.
- Add the cinnamon stick and place the basket on the lid to prevent splashes.
- Set 30 min/100C/speed 2 without the measuring cup to evaporate.
- Remove the cinnamon and blend 20 sec/speed 5 for a smooth texture.
- Check the setting point with a drop on a cold plate.
- Pack hot into sterilized jars and seal under vacuum.
Tips
- Blanch the peaches for 1 minute in boiling water to peel them easily.
- Keep the jars upside down until they cool to seal the vacuum.
- A pinch of cinnamon enhances the peach aroma.
