Canarian mojo picon
Spicy red sauce of pepper and cumin for wrinkled potatoes.

Ingredients
- 4 cloves of garlic
- 1 teaspoon of whole cumin
- 1 teaspoon of hot paprika
- 1 dried red chili pepper
- 40 g of wine vinegar
- 120 g of extra virgin olive oil
- 1 teaspoon of salt
- 50 g of water
Step-by-step
Choose your robot:
- Put the garlic, cumin, chili and salt in the mixing bowl.
- Chop 10 sec/speed 7 until you form a paste.
- Add the paprika and mix 5 sec/speed 5.
- Add the vinegar and water and blend 10 sec/speed 6.
- With the machine at speed 5, add the oil in a stream through the lid opening.
- Blend 20 sec/speed 6 until lightly emulsified and serve.
Tips
- Remove the seeds from the chili to lower the spiciness.
- Mojo picon binds better if it rests for a few hours.
- Serve classic with Canarian wrinkled potatoes.
