Spicy red sauce of pepper and cumin for wrinkled potatoes.

Ingredients

  • 4 cloves of garlic
  • 1 teaspoon of whole cumin
  • 1 teaspoon of hot paprika
  • 1 dried red chili pepper
  • 40 g of wine vinegar
  • 120 g of extra virgin olive oil
  • 1 teaspoon of salt
  • 50 g of water

Step-by-step

Choose your robot:
  1. Put the garlic, cumin, chili and salt in the mixing bowl.
  2. Chop 10 sec/speed 7 until you form a paste.
  3. Add the paprika and mix 5 sec/speed 5.
  4. Add the vinegar and water and blend 10 sec/speed 6.
  5. With the machine at speed 5, add the oil in a stream through the lid opening.
  6. Blend 20 sec/speed 6 until lightly emulsified and serve.

Tips

  • Remove the seeds from the chili to lower the spiciness.
  • Mojo picon binds better if it rests for a few hours.
  • Serve classic with Canarian wrinkled potatoes.
