Nicaraguan Nacatamal
Large corn dough tamale with pork, potato and rice.

Ingredients
- 1 kg corn masa
- 600 g pork, in chunks
- 150 ml achiote-infused oil
- 2 potatoes, sliced
- 100 g rice, soaked
- 1 onion, in rings
- 1 bell pepper, in strips
- 2 tomatoes, sliced
- Mint leaves
- Olives and raisins
- Banana leaves for wrapping
- Salt to taste
- 500 ml broth
Step-by-step

- Marinate the pork with salt, achiote and spices. Set aside at least 30 min.
- Put the masa, achiote oil, 500 ml broth and salt in the mixing bowl. Mix 6 min/90°C/speed 3 until thickened.
- On banana leaves, place a portion of masa, a piece of pork, potato, rice, onion, bell pepper, tomato, mint, olives and raisins.
- Wrap into large packets and tie with string.
- Place the nacatamales in the Varoma dish. Put 1.2 liters water in the mixing bowl and steam 90 min/Varoma/speed 1, topping up water if needed.
- Let rest 15 min before opening.
Tips
- The rice cooks inside the tamale — just soak it beforehand.
- Top up the water during cooking so you don't run out of steam.
