Yucatán Panuchos
Bean-filled tortillas topped with cochinita pibil and red onion.
Gluten-free
Ingredients
- 300 g nixtamalized corn masa
- 180 ml warm water
- 200 g refried black beans
- 300 g shredded cochinita pibil (slow-roasted pork)
- 1 red onion
- 3 bitter (Seville) oranges, or orange juice with lime
- 2 bay leaves
- Oil for frying
- Salt to taste
Step-by-step

- Slice the red onion into thin strips and pickle it in the bitter orange juice, bay leaves and salt for 20 minutes.
- Mix the masa with the warm water and salt until you get a smooth dough.
- Shape tortillas and cook on a griddle 2 min per side; carefully open a small pocket at the edge.
- Fill each tortilla with refried beans and close.
- Fry the panuchos in hot oil until golden and drain on paper.
- Top with cochinita and finish with the pickled red onion.
Tips
- The classic panucho uses the little air pocket that forms as the tortilla cooks — take advantage of it to fill it.
- If you can't find bitter orange, mix orange juice with a bit of lime juice and vinegar.
