Steamed peppers stuffed with quinoa, vegetables and spices.

Ingredients
- 4 red or yellow bell peppers
- 150 g quinoa
- 1 onion
- 1 small zucchini
- 2 garlic cloves
- 200 g crushed tomato
- 40 g extra virgin olive oil
- 1 teaspoon cumin
- 800 g water
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Wash the quinoa. Put it in the basket and the water in the mixing bowl. Cook 14 min/100C/speed 4. Drain and set aside.
- Empty the mixing bowl. Chop the onion and garlic 4 sec/speed 5, add the oil and saute 7 min/Varoma/spoon speed.
- Add the diced zucchini and the cumin and saute 4 min/Varoma/reverse/spoon speed.
- Add the tomato, the salt and the pepper and set 8 min/Varoma/reverse/spoon speed.
- Mix the saute with the reserved quinoa in a bowl.
- Cut the top off the peppers and empty them. Fill them and place them in the Varoma.
- Put water in the mixing bowl and cook 25 min/Varoma/speed 1 until the peppers are tender.
Tips
- Rinse the quinoa well to remove its natural bitterness.
- You can finish the peppers in the oven to brown them.
- Add pine nuts or raisins to the filling for a different touch.
