Manchego pisto
Slow saute of garden vegetables in the style of La Mancha.

Ingredients
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 1 zucchini
- 1 eggplant
- 500 g crushed tomato
- 60 g extra virgin olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Chop the onion and the peppers 4 sec/speed 5 and scrape down the sides with the spatula.
- Add the oil and saute 8 min/Varoma/spoon speed.
- Add the zucchini and the eggplant in small dice and saute 6 min/Varoma/reverse/spoon speed.
- Add the crushed tomato, the sugar, the salt and the pepper.
- Set 20 min/Varoma/reverse/spoon speed with the basket on the lid to avoid splashes.
- Check that the vegetables are tender and the sauce reduced; if needed set 5 min more.
- Let rest and serve warm or hot.
Tips
- The sugar corrects the acidity of the tomato.
- It is delicious with a griddled egg on top in its non-vegan version.
- It improves from one day to the next.
