White beans with vegetables
Comforting white bean stew with pumpkin and leek.

Ingredients
- 400 g cooked drained white beans
- 1 leek
- 1 onion
- 2 garlic cloves
- 1 carrot
- 150 g pumpkin
- 50 g extra virgin olive oil
- 1 teaspoon sweet paprika
- 600 g vegetable broth
- 1 bay leaf
- Salt to taste
Step-by-step
Choose your robot:
- Chop the leek, the onion and the garlic 4 sec/speed 5 and scrape down the sides with the spatula.
- Add the oil and saute 7 min/Varoma/spoon speed.
- Add the paprika and mix 20 sec/Varoma/spoon speed.
- Add the diced carrot and pumpkin, the broth, the bay leaf and the salt.
- Set 18 min/100C/reverse/spoon speed.
- Add the beans and set 8 min/100C/reverse/spoon speed.
- Remove the bay leaf and let rest before serving.
Tips
- The pumpkin breaks down a little and naturally thickens the broth.
- If you use dried beans, soak them the night before and cook them separately.
- A dash of raw oil when serving enhances the stew.
