Roscon de reyes
Sweet bun flavoured with orange blossom water and candied fruit.

Ingredients
- 500 g strong bread flour
- 120 g warm milk
- 2 eggs
- 100 g soft butter
- 120 g sugar
- 25 g fresh yeast
- 30 g orange blossom water
- Zest of 1 orange
- 8 g salt
- Candied fruit and almonds for decorating
Step-by-step

- Put the milk, yeast and sugar in the mixing bowl and set 2 min/37°C/speed 2.
- Add the eggs, orange blossom water, zest, flour and salt and mix 25 sec/speed 6.
- Knead 5 min/closed bowl/dough mode.
- Add the soft butter and knead 4 min/closed bowl/dough mode.
- Let the dough rise in a covered bowl until doubled in volume, about 90 min.
- Shape a cord and join it forming a ring with a central hole.
- Place on the tray and let it rise another 60 min.
- Brush with egg and decorate with candied fruit, almonds and moistened sugar.
- Bake in a preheated oven at 180°C for 25 min until golden.
- Let cool before filling with cream if you wish.
Tips
- Orange blossom water is what gives the characteristic aroma of the roscon.
- Place a ring in the centre so the hole does not close while rising.
