Ingredients

  • 1 medium onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 seeded tomatoes
  • 80 ml of sunflower oil
  • 40 ml of wine vinegar
  • 1 teaspoon of salt
  • 1 pinch of pepper
  • 1 teaspoon of oregano

Step-by-step

Choose your robot:
  1. Place the quartered onion in the mixing bowl and chop 3 sec/speed 4. Transfer to a bowl.
  2. Place the bell peppers in pieces and chop 3 sec/speed 4. Add to the bowl.
  3. Place the seeded tomatoes and chop 2 sec/speed 4. Add to the bowl.
  4. In a jar mix the oil, the vinegar, the salt, the pepper and the oregano.
  5. Pour the dressing over the vegetables and mix with a spoon.
  6. Cover and refrigerate 1 hour so the flavors come together.
  7. Stir before serving.
  8. Serve cold over choripan, meats or offal.

Tips

  • Remove the tomato seeds so it does not release too much water.
  • The longer it rests, the tastier it gets.
  • Even cuts that are not too thin give the typical texture.
