Salsa Criolla
Fresh sauce of onion, bell pepper and tomato for choripan and meats.

Ingredients
- 1 medium onion
- 1 red bell pepper
- 1 green bell pepper
- 2 seeded tomatoes
- 80 ml of sunflower oil
- 40 ml of wine vinegar
- 1 teaspoon of salt
- 1 pinch of pepper
- 1 teaspoon of oregano
Step-by-step
Choose your robot:
- Place the quartered onion in the mixing bowl and chop 3 sec/speed 4. Transfer to a bowl.
- Place the bell peppers in pieces and chop 3 sec/speed 4. Add to the bowl.
- Place the seeded tomatoes and chop 2 sec/speed 4. Add to the bowl.
- In a jar mix the oil, the vinegar, the salt, the pepper and the oregano.
- Pour the dressing over the vegetables and mix with a spoon.
- Cover and refrigerate 1 hour so the flavors come together.
- Stir before serving.
- Serve cold over choripan, meats or offal.
Tips
- Remove the tomato seeds so it does not release too much water.
- The longer it rests, the tastier it gets.
- Even cuts that are not too thin give the typical texture.
