Ingredients

  • 150 g of peanut butter
  • 200 g of coconut milk
  • 30 g of gluten-free soy sauce
  • 20 g of lime juice
  • 20 g of palm sugar
  • 1 clove of garlic
  • 1 piece of ginger of 1 cm
  • 1/2 teaspoon of red curry paste
  • 60 g of water

Step-by-step

Choose your robot:
  1. Put the garlic and ginger in the mixing bowl and chop 4 sec/speed 7.
  2. Add the curry paste and saute 2 min/100°C/speed 1.
  3. Add the peanut butter, coconut milk and sugar.
  4. Add the soy, lime and water and mix 10 sec/speed 4.
  5. Set 6 min/90°C/speed 2 until it integrates and thickens.
  6. Check the lime and salt level and serve warm.

Tips

  • Use tamari instead of soy to make it gluten-free.
  • Adjust the water depending on whether you want it for dipping or coating.
  • Perfect with skewers, noodles or steamed vegetables.
