Homemade Lizano-style sauce
Homemade version of the famous Costa Rican sauce, sweet and sour and spiced to season everything.

Ingredients
- 3 ripe tomatoes
- 1 carrot
- 1/2 onion
- 2 cloves of garlic
- 100 ml vinegar
- 200 ml water
- 2 tablespoons brown sugar
- 1 tablespoon mustard
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 bay leaf
Step-by-step
Choose your robot:
- Place the onion, garlic, carrot and tomatoes in the mixing bowl and chop 5 sec/speed 5.
- Add the water, the vinegar, the sugar, the mustard, the cumin, the pepper, the salt and the bay leaf.
- Cook 20 min/100C/speed 2.
- Remove the bay leaf and blend 1 min/progressive speed 5-10 until you get a fine sauce.
- If you want more thickness cook without the measuring cup 5 min/100C/speed 2.
- Let cool and store in a sterilized jar in the fridge.
- Use to season gallo pinto, casados, meats and soups.
Tips
- Adjust the sugar and vinegar to balance the sweet and the sour.
- It keeps up to three weeks refrigerated.
- Strain the sauce if you prefer it completely smooth.
