Homemade Lizano-style sauce

Homemade version of the famous Costa Rican sauce, sweet and sour and spiced to season everything.

Ingredients

  • 3 ripe tomatoes
  • 1 carrot
  • 1/2 onion
  • 2 cloves of garlic
  • 100 ml vinegar
  • 200 ml water
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bay leaf

Step-by-step

Choose your robot:
  1. Place the onion, garlic, carrot and tomatoes in the mixing bowl and chop 5 sec/speed 5.
  2. Add the water, the vinegar, the sugar, the mustard, the cumin, the pepper, the salt and the bay leaf.
  3. Cook 20 min/100C/speed 2.
  4. Remove the bay leaf and blend 1 min/progressive speed 5-10 until you get a fine sauce.
  5. If you want more thickness cook without the measuring cup 5 min/100C/speed 2.
  6. Let cool and store in a sterilized jar in the fridge.
  7. Use to season gallo pinto, casados, meats and soups.

Tips

  • Adjust the sugar and vinegar to balance the sweet and the sour.
  • It keeps up to three weeks refrigerated.
  • Strain the sauce if you prefer it completely smooth.
