Bolivian Salteñas
Juicy baked empanadas with beef, potato and jellied broth filling.
Ingredients
- 500 g flour
- 120 g lard or margarine
- 200 ml warm water
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon achiote or yellow food coloring
- 400 g finely chopped beef
- 300 g potato, cut into small cubes
- 1 large onion, chopped
- 2 tablespoons ground yellow chili (ají amarillo)
- 200 ml beef broth
- 1 tablespoon unflavored gelatin
- 100 g cooked peas
- 2 hard-boiled eggs, chopped
- Olives, raisins, cumin, oregano and salt to taste

- For the filling (jigote): the night before, put the onion, ají amarillo and 30 g oil 5 min/120°C/speed 1.
- Add the beef, potato, cumin, oregano and salt: 8 min/100°C/reverse/spoon speed.
- Add the broth and dissolved gelatin, mix 2 min/90°C/reverse/speed 1. Pour into a container and refrigerate overnight to set.
- For the dough: put the flour, lard, sugar, salt and achiote in the mixing bowl, mix 20 sec/speed 4.
- Add the warm water and knead 3 min/closed lid/dough mode. Let rest 20 minutes.
- Roll out the dough, cut circles and fill with the cold jigote, peas, egg, olives and raisins.
- Close, forming the traditional pleated edge, and bake 18 minutes at 200°C until golden.
Tips
- The jigote must be very cold and firm so it can be filled without spilling.
- Brush with beaten egg before baking for a glossy golden finish.
