Classic French caramelised onion soup with gratinated cheese.

Ingredients

  • 600 g onion, julienned
  • 40 g butter
  • 20 g extra virgin olive oil
  • 1 teaspoon sugar
  • 30 g flour
  • 100 g white wine
  • 800 g meat stock
  • 4 slices of toasted bread
  • 150 g grated gruyere cheese
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the butter, oil and onion in the mixing bowl.
  2. Saute 20 min/Varoma/reverse/spoon speed with the basket on the lid to caramelise.
  3. Add the sugar and flour and saute 3 min/Varoma/reverse/spoon speed.
  4. Pour in the wine and cook 3 min/Varoma/speed 1 without the measuring cup to evaporate the alcohol.
  5. Add the stock, salt and pepper and set 15 min/100°C/reverse/spoon speed.
  6. Divide the soup into small oven dishes, cover with bread and cheese.
  7. Gratinate in the oven until the cheese browns and serve immediately.

Tips

  • Patience when caramelising the onion is the key to the flavour.
  • For a gluten-free version use gluten-free bread and thickener.
