Gratinated onion soup
Classic French caramelised onion soup with gratinated cheese.

Ingredients
- 600 g onion, julienned
- 40 g butter
- 20 g extra virgin olive oil
- 1 teaspoon sugar
- 30 g flour
- 100 g white wine
- 800 g meat stock
- 4 slices of toasted bread
- 150 g grated gruyere cheese
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the butter, oil and onion in the mixing bowl.
- Saute 20 min/Varoma/reverse/spoon speed with the basket on the lid to caramelise.
- Add the sugar and flour and saute 3 min/Varoma/reverse/spoon speed.
- Pour in the wine and cook 3 min/Varoma/speed 1 without the measuring cup to evaporate the alcohol.
- Add the stock, salt and pepper and set 15 min/100°C/reverse/spoon speed.
- Divide the soup into small oven dishes, cover with bread and cheese.
- Gratinate in the oven until the cheese browns and serve immediately.
Tips
- Patience when caramelising the onion is the key to the flavour.
- For a gluten-free version use gluten-free bread and thickener.
