Ingredients

  • 1 onion
  • 2 garlic cloves
  • 1 carrot
  • 2 celery stalks
  • 1 zucchini
  • 1 potato
  • 200 g cooked white beans
  • 400 g crushed tomato
  • 80 g short pasta
  • 50 g extra virgin olive oil
  • 800 g vegetable broth
  • Salt and pepper to taste
  • Fresh basil

Step-by-step

Choose your robot:
  1. Chop the onion, the garlic, the carrot and the celery 4 sec/speed 5 and scrape down the sides with the spatula.
  2. Add the oil and saute 8 min/Varoma/spoon speed.
  3. Add the diced zucchini and potato and the crushed tomato. Saute 3 min/Varoma/reverse/spoon speed.
  4. Add the broth, the salt and the pepper and set 12 min/100C/reverse/spoon speed.
  5. Add the pasta and the beans and set 8 min/100C/reverse/spoon speed.
  6. Check that the pasta is al dente.
  7. Serve with fresh basil on top.

Tips

  • Use gluten-free pasta for a version suitable for celiacs.
  • Grated parmesan when serving enriches it in the non-vegan version.
  • Make the most of the seasonal vegetables you have on hand.
