Ingredients
- 500 g corn flour for tamales
- 300 g beef, cooked and shredded
- 1 boiled potato, in small cubes
- 1 onion
- 1 scallion
- 2 hard-boiled eggs, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 120 g beef suet or butter
- Soaked corn husks
- Salt and pepper to taste

- Put the onion and scallion in the mixing bowl. Blend 4 sec/speed 5.
- Add the suet and sauté 6 min/Varoma/speed 1.
- Add the shredded beef, paprika and cumin. Sauté 5 min/100°C/reverse/speed 1. Combine the filling with the potato and hard-boiled egg and set aside.
- Without washing the mixing bowl, add the corn flour, 400 ml warm water, salt and 50 g suet. Mix 30 sec/speed 4 into a smooth dough.
- Assemble the tamales by placing dough on two husks, a little filling in the center, cover with more dough and close into tied parcels.
- Put 700 ml water in the mixing bowl. Arrange the tamales in the Varoma and tray, and cook 45 min/Varoma/speed 1.
- Let rest 10 minutes before opening and serving.
Tips
- Soak the husks in hot water so they're pliable.
- Beef suet gives the traditional flavor, but you can use butter.
